When I was a child, my mother tried very hard to make sure we ate our vegetables at every dinner. During that time, the common procedure with vegetables was to boil, pickle, steam, nuke, fry, or simply un-can, then add some butter and salt. I remember, with my sensitive, child taste buds, trying certain vegetables and swearing never to bring such torture upon myself again. Like my mother, I too want myself to be healthy and strong, and know that in this pursuit it’s inevitable to avoid eating vegetables. For a while it was incredibly hard to get over my first impressions. Why on earth would I try beets? Oh, they’re incredibly good for you? Shoot. However, I gave in, and gave some recipes I found a try. This story has a happy ending because I ultimately discovered some delicious recipes for beets that improved my outlook.

Beets, scientifically known as Beta vulgaris, are root vegetables that come in various shapes and colors, with the most common being the round, red beet. However, they can also be found in other colors like yellow and white. Beets are known for their earthy flavor and vibrant color. Beets are a nutritious and versatile vegetable that can be incorporated into a variety of dishes, offering both culinary and health benefits.

There are some really awesome ways to get your dose of veggie-nutrients without having to hold your nose as you swallow.
