- 3 cups of crsip cucumbers, cut into ½ inch cubes (English cucumber or Persian cucumbers have less seeds)
- 4 cups of watermelon, cut in 1 inch cubes (Kitchn shows you how to cut a watermelon into cubes)
- 3 ½ Tablespoons of fresh lime juice (I bought the pre-squeezed kind)
- 3 Tablespoons of hoisin sauce
- 2 teaspoons of seeded and finely diced jalapeno
- ½ teaspoon of sea salt
- 1/3 cup of chopped flat-leaf parsley (fresh herbs contrast so nicely with the sweet watermelon)
- Black pepper (to your taste)
How To Make Cucumber Watermelon Salad:
Cut your watermelon and cucumbers into cubes.
Place the cucumber and watermelon into a large bowl with a strainer over it. This allows any of the juice from the watermelon to drip into the bowl.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes and up to 4 hours.
When it is done refrigerating, put the cucumbers and watermelon into a serving dish.
In a separate bowl, whisk the: lime juice, hoisin sauce, jalapeno, and salt. Then pour over the cucumber and watermelon. Gently toss the ingredients to spread the dressing around.
Add the parsley and toss gently again. Add the black pepper to taste and salt if needed. It is ready to serve.

Instructions

- Add the parsley and toss gently again.
