With two kids in middle school and both playing fall sports, life is pretty crazy these days. Most nights there is practice or a game and occasionally there is a night where both kids have a game in two different places at the same time which is really difficult! Busy weeknights mean dinner needs to be easy and quick. This Gluten Free Lemon Pepper Chicken Pasta is just that, easy and quick. It’s also super delicious! If you’re not following a gluten free diet, don’t worry. You can simply use regular pasta and follow the recipe otherwise for the same great results.

Gluten Free Lemon Pepper Chicken Pasta

This recipe uses gluten-free brown rice pasta so you can savor the guilt-free pleasure of Lemon Pepper Chicken Pasta with this healthier alternative. However, if you don’t want the gluten-free version, the recipe is the same, just use your favorite regular pasta.

Ingredients:

  • 1 lb brown rice pasta
  • 1 lb boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp fresh lemon juice
  • 1 tbsp lemon pepper seasoning
  • salt, pepper, and garlic salt to taste
  • olive oil

How To Make Lemon Pepper Chicken Pasta:

One of the great things about this dish is that it can also be made all in one pan or large skillet!

Begin by cutting your boneless, skinless chicken breast into small pieces making sure to remove any fat. I like the pieces to be bite sized.

Over medium heat cook the chicken in a large saute pan in a small amount of oil – like a frying pan but with deep sides.  Season the chicken with the lemon pepper, salt, pepper, and garlic salt.

Add 1 tsp of lemon juice and continue cooking until the chicken is cooked through or has reached 165 degrees.

Once the chicken has cooked completely, transfer it to a bowl and set aside.  Stir in a small amount of chicken broth to the pan the chicken was cooked in, stirring to loosen any of the seasonings and flavors that browned to the pan.

Next add your uncooked pasta to the pan and cover with the remaining chicken broth, heavy whipping cream, and 1 tsp of lemon juice.  Bring the liquid to a boil, stirring occasionally. Continue cooking for 10-12 minutes or until the pasta is tender.

The liquid will thicken and become a perfect lemon cream sauce as the pasta cooks.

Stir the chicken into the pasta and cream sauce and serve! You may wish to garnish with some parmesan cheese, fresh lemon zest, and fresh parsley.
