Pressure Cooker Beef Stew In A Jiffy

“Low and slow” is usually the motto for tender and delicious meat, however a pressure cooker can help speed things along.  Less expensive cuts of meat such as chuck, chuck Shoulder, and top chuck are best in a beef stew because they usually require a long cook-time to get fork tender.  Time is a precious commodity when I am running around picking up my kids from school and transporting them to their activities.  My pressure cooker is an invaluable time-saver.  I have always loved beef stew, but cooking it the “low and slow” way can take more than 2 hours.  Here is a recipe for a delicious Pressure Cooker Beef Stew that, with a little preparation, can be ready in just 40 minutes.

Pressure Cooker Beef Stew Recipe

Prep Time: 10 minutes
Cook Time: 30 minutes
Serves 6

Pressure Cooker Beef Stew Ingredients:

  • 1 1/2 pounds cubed beef chuck
  • 2 Russet potatoes
  • 5 carrots
  • 1 onion
  • 2 diced garlic cloves
  • 2 cups of beef stock
  • 1 Tbsp. Worcestershire Sauce
  • 1/2 Tbsp. A-1 Sauce
  • 3 Tbsp. flour
  • 1 tsp. paprika
  • 1 tsp. salt
  • t tsp. pepper
  • 1 bay leaf
  • 2 Tbsp. chopped rosemary
  • 3 Tbsp. vegetable oil

Pressure Cooker Beef Stew Directions:

Dice the onion and add to the diced garlic.  Peel and cube the potatoes.  Chop the carrots.

Place the flour in a bowl and mix with the paprika, salt, and pepper.  Toss the beef cubes in the flour mixture until coated.

Place 2 Tbsp. of oil in the pre-heated pressure cooker set to brown.  Once the oil is heated, brown the beef on all sides.

Remove the beef, add 1 Tbsp. oil to pressure cooker. Add onion and garlic, sauté until garlic begins to brown.

Add the browned beef, beef broth, Worcestershire Sauce, A-1 Sauce, rosemary, and bay leaf to the pressure cooker.

Lock the lid on cooker, and set to high for 15 minutes.  After the timer goes off, carefully release the steam from the cooker.

Add the carrots and potatoes, set the cooker on high for another 15 minutes. Once the timer goes off, it is ready to serve.

Pressure Cooker Beef Stew

I usually serve my Pressure Cooker Beef Stew with a green salad and bread.

To save time, I will chop all the vegetables in advance.  I refrigerate the cubed potatoes in water to keep them from turning brown.
