Erika Wassall, the Jersey Farm Scribe here with a recipe for grilled carrots. This side dish recipe is so easy, so quick and can do be done with just carrots, a few things you probably already have in the pantry and foil.
I love grilling. I love cooking in the sun. It feels… right. So anything that allows me to cook more than just meat on the grill, and I’m IN! As an added bonus, these sweet grilled carrots are great reheated. To reheat, just wrap them in foil and toss them in a 350 degree oven for 10 minutes. I always grill extra to use an an easy veggie side dish throughout the week.
Simply Heavenly Sweet Carrots On The Grill Recipe
First, peel your carrots, and put them aside. I leave the tips on, but it’s up to you.
Then mix up some butter and honey and pop it in the microwave for 10 second intervals until it’s all melted and mixed together. Toss in any herbs of your choice. Fresh, dried, whatever you have.
I used parsley, chives, and tarragon. But anything will work, rosemary and thyme, even just basics like oregano and basil would be great. Honestly, if you don’t have any herbs, this recipe will still work.
Mix the herbs into the butter/honey mixture. Then dip/roll your carrots in one at a time, get them coated and then place them in a Ziploc bag.
When they’re all in, pour the rest of the honey/butter marinade on top of them, seal the bag (with as little air in it as possible) and lay them in the fridge.
TIP: if the marinade won’t pour because it’s thickened, pop it back in the microwave for ten seconds, and it’ll easily pour into the bag. If it’s slightly warm when you pour it, that’s fine.
You can let this sit… really as long as you want. Two hours… two days, it’s all good. If you think of it, flip it once or twice to get the marinade on both sides. But honestly, if you forget, or even if you skip this step, you’re still gonna end up with some yummy carrots.
Cooking Carrots On The Grill
Put the grill on medium heat, and lay the carrots right over the flame, (this will vary slightly depending on your grill). Brush on some more of the marinade every few minutes, and turn them every ten minutes. Depending on how big your carrots are, it takes about 25-30 minutes or so to get them tender. Simply test with a fork. If the fork goes in, they’re done!
I like cooking my carrots directly on the grill to get that nice grill mark but they also work just fine in a foil packet. This is made with one sheet of foil on top and one on the bottom and fold the edges shut. Grilled carrots in foil are a little bit faster since they kind of get steamed in there. How long to grill carrots in foil? About 10 minutes on each side of the foil pocket.

Sweet Grilled Carrots Recipe
Ingredients
- 8 carrots, peeled
- 2 TBS honey
- 2.5 TBS butter, melted
- 3 teaspoons of herbs (any) (suggestion: 1 each of parsley, tarragon, and chives)
Instructions
- Marinate the carrots in the melted butter, honey, and herbs for at least 30 minutes.
- Place on hot grill and baste with marinate as you turn until soft inside about 25 minutes (depending on the size of the carrots and the heat of the flames).
- Remove from grill and serve.
