Yellow Squash And Zucchini Fritters Recipe

We’v always wanted to have a big garden. Growing up my dad always grew a lot of the veggies our family ate and my father-in-law had the most beautiful edible garden.  This spring we started early with seeds inside and ended up with several plants for our garden boxes. We lost several of our zucchini and summer squash seedlings though and I was heartbroken.  Well, heartbroken until a week ago when I realized just how much one of each of those plants can produce. We have so much fresh zucchini and yellow squash that we are having trouble eating it all. It is a good thing I’m creative in the kitchen and have neighbors to share with! Earlier this week I made “noodles” from them and today I made Squash and Zucchini Fritters. The fritters are such a hit so I am sharing the recipe with you here.

This summer squash and/or zucchini fritter recipe was first published July 21, 2017. I have added a recipe card and republished it here for my new readers to enjoy.

Zucchini and Squash Fritters

Zucchini fritters are savory, light, and slightly crispy, with a mild flavor that’s enhanced by the seasonings you add. The zucchini (and/or yellow squash) itself has a delicate, almost neutral taste, which allows the other ingredients, like garlic, herbs, and cheese, to shine. The fritters usually have a crispy exterior and a soft, tender inside, making them a satisfying snack or side dish.

Zucchini and yellow squash are very alike in texture and one can easily be substituted for the other in this recipe.

Simple Ingredients:

  • 1 1/2 Cups Shredded Zucchini and Yellow Squash
  • one tablespoon shredded Red Onion
  • 1 Cup Ground Oats – I used gluten free oats
  • 1/2 Cup Parmesan Cheese
  • 2 Eggs
  • Salt, Black Pepper, and Garlic Powder to Taste
  • 1 tbsp extra virgin olive oil

How To Make Zucchini Fritters:

I used a mandolin slicer and shredded zucchini and summer squash until I had about 1 1/2 cups. You could use a food processor or a box grater for grated zucchini instead.

I placed the shredded veggies into a medium mixing bowl and grated my red onion on top.

For the oats, I wanted them a little finer than they come so I put them in my Ninja for a few seconds to make them more like fine bread crumbs.  Add 1 cup of the ground oats and 1/2 cup of Parmesan cheese to the veggies.

Stir well with a spatula to combine.

Next, whisk 2 eggs well and add to the mixture.

Stir the egg in, making sure the consistency is good for making patties.  It should be sticky and thick.

Heat a large skillet with olive oil.  Form the mixture into 1/4 cup balls and flatten before placing in the skillet.  Cook over medium-high heat until golden brown on each side, about 4 minutes each side.

Remove crispy zucchini fritters from the skillet and serve hot.  You may wish to place them on a wire rack with paper towels as they come out of the skillet to drain any excess oil from the patties.

My family loves these with sweet chili sauce and I like them with a creamy, lime ranch dip!  They make a great side or even a replacement for a burger patty!

What To Serve With Zucchini Fritters:

Zucchini fritters pair well with a variety of dishes and sauces. Here are some ideas:

Dipping Sauces

  1. Ranch: A creamy herbacious yogurt-dressing. We add in some lime juice. It adds a refreshing contrast to the fritters.
  2. Garlic Aioli: A garlicky mayo-based sauce that adds richness and a burst of flavor.
  3. Marinara Sauce: A tangy tomato-based sauce for an Italian twist.
  4. Sweet Chili Sauce or Sriracha Mayo: A spicy option for those who like a bit of heat.

Side Dishes

  1. Fresh Salad: A light, crisp salad with a lemon vinaigrette complements the fritters’ texture and flavor. Consider a Greek salad or a simple mixed greens salad.
  2. Roasted Potatoes: Crispy, seasoned potatoes add a hearty component to the meal.
  3. Quinoa or Rice: Serve the fritters with a side of quinoa or rice to make the meal more filling.

Protein Options

  1. Grilled Chicken or Fish: A lean protein like grilled chicken breast or a piece of grilled fish pairs well with zucchini fritters for a balanced meal.
  2. Poached or Fried Eggs: Serve a poached or fried egg on top of the fritters for a delicious brunch option.
