Chocolate Chip Meringues

I have a major sweet tooth so when Danielle Prestejohn, a nutrition coach and online cookbook author, offered to share her recipe for chocolate chip meringues, I knew I had to try it.  She loves to create recipes that are healthy yet delicious (and I like to eat them!)  so I am happy to feature her recipe for chocolate chip meringues.

“Meringues and I have a history. As a chronic dieter, I used to count down my calories all the way to my sugar free packaged meringues I would enjoy at night. Now whenever I see these meringues in the grocery store, I cringe a bit. Not only do they bring me back to the no fun calorie counting days, but to be honest I never really liked them that much anyway. What I did like was that I could eat a whole bunch for 100 calories. Now I would say it’s totally not worth it! These meringues on the other hand are different. These are full of real food ingredients, delicious, and protein packed.”

Indulgent Chocolate Chip Meringues Recipe

Chocolate Chip Meringue Cookie Ingredients:

4 large egg whites
3 tsp. coconut sugar
1 tbs. unsweetened cocoa powder
1/4 cup chocolate chips
dash of sea salt

Directions For Chocolate Chip Meringues:

Preheat your oven to 200 degrees.

In a mixing bowl beat your egg whites, coconut sugar, and salt on high speed until stiff peaks form.

Gently fold the cocoa powder into your mixture.

Next carefully fold in the chocolate chips.

On a well greased baking sheet scoop the egg whites into circles.

Bake for 1 and 1/2 hours at 200 degrees.

After 1 and 1/2 hours turn off your oven and let the meringues cool inside the oven (about 1 hour longer).

Makes 6-8 large meringues

Fast Chocolate Chip Meringues Tip:

To make these quickly you can bake them in a 400 degree oven for 10-15 minutes watching them closely to make sure they don’t burn. They won’t harden as well but still make for a great sweet tooth fix in a pinch.
