Easy Chicken Udon Noodle Soup Recipe

This is the time of year when I just love soups. So when I received an invitation to take the JSL Foods Fortune Udon Noodle Soup Recipe Challenge, I thought, “Hey, that sounds like fun”. My family loves udon noodles anyway so I thought I might as well create my own udon noodle soup to enter. I just love the way my easy chicken udon noodles soup recipe turned out so I have my fingers crossed to win! It is savory and a bit spicy and a bit sour and it really seems to play with all your taste buds at once while delivering a warming comfort food.

About Udon Noodles

Udon noodles are a thick, wheat-flour noodle used frequently in Japanese cuisine. They are often served hot as a noodle soup. It is amazing to watch udon noodles being made by hand. They seem to just magically turn from a rope of dough into 100s of fresh noodles!

Fortune Udon Noodles

However, I don’t make my own Udon noodles! I get fresh udon noodles pre-made. You can get Fortune udon noodles in the refrigerated produce section of your grocery store (at shops like Shaws, Star Market, Jewel, Albertsons, Randalls, Stater Bros, Safeway, Lucky’s, Food Maxx, Food 4 Less, Savemart, Bashas’, Raley’s, Bel Air, Nob Hill Foods, WinCo, and Target.)

I like the Fortune udon noodles because they are pre-cooked, cholesterol-free, MSG free and ready to serve in just minutes.  They can be fixed on the stovetop or in the microwave so they fit easily into your busy family schedule for a fast, hot meal. Fortune udon noodles also contain added flaxseed to provide 130 mg of ALA Omega-3 per serving. Pretty cool! They also come with flavor packs so you can just serve them as is. However, I think it is a lot of fun to come up with my own Fortune Udon Noodles Recipes by adding different toppings.

Udon Chicken Soup With Hard Boiled Egg and Green Onion

This Chicken Udon Noodle Soup is very simple to make and it is so delicious! You will enjoy the flavorful broth, fresh vegetables, and chewy noodles in this chicken udon recipe. This fast bowl of soup is an easy meal that is sure to please on chilly days.

Chicken udon is a deliciously balanced dish with a variety of flavors and textures. The broth, typically made with soy sauce and mirin, has a rich and deep umami flavor. It’s savory with a hint of sweetness, creating a comforting and satisfying taste.

Ingredients:

  • 1 package of Fortune Udon Noodles Chicken Flavor
  • 2 tsp mirin (rice wine similar to sake, sold in the same aisle as soy sauce)
  • 2 tsp soy sauce
  • 1 clove of garlic, pressed
  • 1/2 tsp fresh ginger, finely grated
  • cooked chicken breast or chicken thighs, sliced
  • 1 egg, hard boiled and halved
  • green onion, sliced on the diagonal
  • sesame seeds (optional garnish)
  • sriracha sauce (optional garnish)
  • toasted sesame oil (optional garnish)

How To Make Chicken Udon Noodles:

  1. Add 1 and 1/3 cup water to a medium saucepan and bring to a boil over medium-high heat.
  2. Add udon noodles, sauce packet, mirin, soy sauce, garlic, and ginger.
  3. Reduce to medium heat and allow to simmer for 2-3 minutes.
  4. Pour in bowl and then top with slices of chicken, green onions, and hard boiled egg.
  5. Garnish with a drizzle of sesame oil and sriracha. Sprinkle with a few sesame seeds.
  6. Serve and enjoy.

Cooking Notes:

If you prefer, you can toss out the noodles sauce packet and use 1 and 1/3 cup of chicken broth in place of the water and sauce packet.

For the cooked chicken breast, you can use leftover chicken (like I did), rotisserie chicken, or cook chicken pieces up in a frying pan with some salt and pepper to season it. Also, speaking of leftovers, if you ever have any pieces of shrimp tempura leftover, they would be amazing on top of this hearty Japanese soup.
