This, like most tuna recipes, is nice and light and fixes up fast and easy for lunch or a light dinner option.

Guilt-Free Chilled Grilled Veggie Keto Tuna Salad

This tuna salad without mayo uses a vinaigrette dressing as an easy and flavorful replacement. Instead of your traditional American sliced celery it uses grilled veggies for a more upscale, fancy tuna salad bowl that makes an excellent light meal. You will love this healthy tuna salad recipe.

This easy tuna salad is pretty quick to make.

Tuna Salad Simple Ingredients:

  • 8 thin (or 6 thick) asparagus stalks, tough ends removed, cut into 2-inch pieces
  • 1 cup eggplant cut into 1-inch cubes
  • One 1/2-inch-thick onion slice, rings intact (red onion, yellow onion, or white onion all work fine)
  • 1/2 cup cherry tomatoes
  • 3 cups chopped romaine lettuce
  • One 2.6-oz pouch StarKist Tuna Creations(r), Sweet & Spicy (Or one can of Chunk Light Tuna Fish, drained)
  • 2 tbsp. light balsamic vinaigrette dressing
Grilled Veggie Tuna Salad Recipe

How To Make Chilled Grilled Veggie Tuna Salad (No Mayo):

Bring a grill pan sprayed with nonstick spray to medium-high heat. Add asparagus, eggplant, and onion. Cook until slightly softened, 6 – 8 minutes.

Flip veggies, and add the cherry tomatoes to the pan. Cook for 4 minutes.

Flip tomatoes. Cook until all veggies are soft and slightly blackened, about 2 minutes.

Transfer veggies to a medium bowl. Let cool completely.

Chop onion. Cover and refrigerate veggies until chilled, at least 30 minutes.

Place lettuce on a large plate or in a large bowl and evenly top with chilled vegetables and canned tuna. Top or serve Chilled Grilled Veggie Tuna Salad with dressing on the side. Yum! You may garnish with fresh herbs like fresh dill, fresh basil, or fresh parsley, if you like.
