Healthy Cereal Bar Recipe
I think you are absolutely going to love this recipe for brown rice cereal energy bars. These almond butter crisps are very rich and satisfying and the crunch is so fun and perfect for snack time. As an added bonus, this healthy cereal bar recipe is gluten free and vegan!

almond butter crisps
There’s a restaurant in Tampa called Fresh Kitchen that rawks my world! They have amazing
veggie bowls, and right before the register where you pay, they dangle almond butter treats in front of your face. I can never say no‚ and I never regret buying them either. They are amazing! This is my own version of those bars, and I think they turned out pretty dang good.
MAKES 16 SQUARES
1 cup brown rice syrup
2 tablespoons organic virgin coconut oil,
plus more for greasing the pan
2 teaspoons pure vanilla extract
1⁄2 teaspoon sea salt
1 cup creamy almond butter
2 teaspoons ground cinnamon
7 cups crisp brown rice cereal
1. Line a 13 × 9-inch baking pan with parchment paper.
2. In a medium saucepan over medium-high heat, combine the rice syrup, oil, vanilla, and salt. Bring to a rolling boil. Boil for 1 minute, then remove from the heat. Stir in the almond butter and cinnamon.
3. Place the cereal in a large mixing bowl. Pour the almond butter mixture over the cereal and stir until well coated. Transfer the mixture to the prepared pan. Using oiled hands, press the mixture evenly into the pan. Let cool completely before cutting into squares.
GLUTEN FREE, VEGAN, DAIRY FREE, (NUT FREE if you replace almond butter with sunflower butter)
