With summer here one of my go to meals is salads.  It doesn’t matter if it’s lunch or dinner time, I love salad.  My goal is to get the kids eating more salads for side dishes and for the main dish too.  The more colorful we can make them the better success we have!  They especially love them if there is fruit in them which inspired this homemade Strawberry Balsamic Vinaigrette Recipe.  This Strawberry Balsamic Vinaigrette Dressing goes great on any salad and is perfect for summer time, especially right now with strawberries in season.

Strawberry Balsamic Vinaigrette Recipe

Strawberry balsamic vinaigrette is a delicious and versatile dressing. Strawberries are rich in vitamins, antioxidants, and fiber, while balsamic vinegar contains acetic acid, which may have health benefits such as aiding in digestion and controlling blood sugar levels. The combination of sweet strawberries and tangy balsamic vinegar creates a well-balanced flavor profile that is both refreshing and complex. Here’s a simple recipe for making strawberry balsamic vinaigrette.

Ingredients:

  • 2 cups fresh strawberries
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey mustard
  • salt, garlic powder, and onion powder to taste

You can adjust the sweetness and acidity of the dressing to suit your taste preferences by varying the amount of honey, maple syrup, or balsamic vinegar used in the recipe. Additionally, you can add herbs or spices to customize the flavor even further.

How To Make Strawberry Balsamic Vinaigrette:

Wash the strawberries and remove the stems and hulls.  Cut them in half and place them in a food chopper or blender.  I usually use my Ninja but you could use any type of blender.

Add the oil, vinegar, lemon juice, and mustard to the strawberries.

Blend all the ingredients until they become smooth.  The mixture will be fairly thick and depending on your balsamic it may vary in color from a shade of pink to a bit more brown. This won’t change the taste at all.

Taste after you blend to make sure it isn’t to tart. You may need to add additional honey mustard or additional seasonings depending on how you like your dressing. Pour it over your food and enjoy! If you have extra just store it in the refrigerator in an airtight container in the refrigerator for up to a week.

This Strawberry Balsamic Vinaigrette Recipe goes great over mixed greens with a variety of veggies like cucumber, green pepper, grape tomatoes, and red onions.  We also love to add grilled chicken breast that’s been lightly seasoned, fresh strawberry slices, and shredded Italian cheese.  You can even add candied pecans or almonds for some crunch.  A salad like this really does become a meal and it’s perfect for those hot summer days when you don’t want something heavy! Alternatively, is great over a simple bed of baby spinach leaves. I just love trying different salads in the summer.
