Zucchini Brownies will make it easy to get some veggies into your kids! This zucchini brownies recipe is easy to make and the zucchini keeps your brownies moist and airy. At the end, there are some great vocabulary builders to go over with your kids while you chow down! This recipe is from a super cool SAT Vocabulary cookbook that builds vocab in a fun way while you cook.

Making zucchini brownies is a smart (and delicious) way to enjoy a healthier dessert without sacrificing flavor. Here are some reasons why people love making them:

Zucchini Brownies Recipe:

Zucchini brownies taste rich, chocolaty, and fudgy—not like zucchini at all. The zucchini melts into the batter as it bakes, adding moisture but no strong flavor. The result is similar to classic brownies, but often with a slightly lighter texture and a super moist bite. If you didn’t know zucchini was in them, you probably would never guess!

Zucchini Brownies Ingredients:

  • 1 small zucchini
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 stick of unsalted butter, melted
  • 1/4 tsp baking powder
  • 1 cup sugar
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/3 cup unsweetened cocoa powder
  • 3 milk chocolate bars (optional)
  • nonstick cooking spray

How To Make Zucchini Brownies:

Preheat oven t 350 F.
Grease a 13″ by 9″ cooking pan with non stick cooking spray.  Grate the zucchini.
Mix together the wet ingredients.  Add the dry ingredients to the wet and whisk well to combine.
Mix in the grated zucchini.
Pour half of the brownie batter into the pan.
Place the 3 chocolate bars side by side in the pan on top of the batter but don’t press down.
Add the rest of the batter on top and bake for 27-30 minutes.
Let brownies cool before cutting and serving.
