It is an adorable treat served in cups made from fresh lemons and it makes the perfect summer dessert. 5 Minute Strawberry Frozen Yogurt- Healthy And Delicious
This strawberry frozen yogurt recipe is actually a very healthy dessert or snack choice because it is mostly pureed frozen healthy strawberries. It also has a bit of yogurt for creaminess and a bit of honey for sweetness. The fresh lemon juice goes great with strawberries and the lemon cups are just plain fun!
The strawberry frozen yogurt is ready in just about 5 minutes. However, if you prefer a harder scoop style instead of the soft serve consistency, you can pop it in the freezer for a few hours to get hard scoops.
Ingredients:
- 2 cups frozen strawberries
- 1/4 cup low fat Greek vanilla yogurt
- 1 tbsp raw honey (I used a heaping tablespoon)
- 1-2 tbsp fresh lemon juice
- fresh lemons for cups
Frozen strawberries are better than fresh strawberries for this recipe that way you can just blend and serve the soft frozen yogurt instead of waiting for the strawberry yogurt to freeze into hard pops. Using frozen berries allow you to get that smooth soft serve consistency without an ice cream machine.
Plain greek yogurt would work but then you would probably want to add more honey, agave nectar, or maple syrup to this easy recipe for a sweeter result. Greek-style yogurt is better than plain yogurt because it is thicker.
How To Make Homemade Strawberry Frozen Yogurt:
Combine all frozen yogurt ingredients in the pitcher of your blender or food processor.
Blend on high until smooth. Evenly pour the mixture into a bowl and place in freezer. You can leave it there while you prepare your lemon cups to serve the soft serve style frozen yogurt in or you can leave it there for 2-3 hours until it is solid enough to scoop, as you prefer.
While the yogurt is in the freezer cut several lemons in half. Use a knife and spoon to remove the fruit from the peel, keeping the peel intact. Trim a small amount of the peel off of the bottom of each “bowl” to create a flat spot that will allow the cup to sit level.
When the frozen yogurt has become firm use an ice cream scoop to fill each lemon cup. Return to freezer until ready to serve the rest. You could garnish with a bit of curled lemon peel or zest. They make such a pretty frozen dessert this way.
