It has been so, so hot here the last week. Don’t get me wrong, I am definitely not complaining. It wasn’t all that long ago that we were waking up to 20 below zero temps and I know they’ll come around again too soon. The heat has had us spending lots of time at the beach, in the water, and enjoying frozen treats to cool off whenever we can. As I’ve mentioned many times we have a lot of food sensitivities and allergies so when we want a treat of any kind it’s almost always homemade so we know what is in it and that it’s safe for all of us. This Homemade Strawberry Frozen Yogurt Recipe is quick and easy to make, healthy, and delicious! It an adorable treat served in cups made from fresh lemons and the perfect summer dessert. This quick and easy strawberry frozen yogurt is easy to make and does not require an ice cream maker.
Homemade Strawberry Frozen Yogurt Recipe (in Lemon Cups)
- 2 cups frozen strawberries
- 1/4 cup low fat Greek vanilla yogurt
- 1 tbsp raw honey (I used a heaping tablespoon)
- 1-2 tbsp fresh lemon juice
- fresh lemons for cups
How To Make Homemade Strawberry Frozen Yogurt in Lemon Cups:
Combine all frozen yogurt ingredients in the pitcher of your blender.
Blend on high until smooth. Evenly pour the mixture into a bowl and freeze 3-4 hours or until solid.
While the yogurt is in the freezer cut several lemons in half. Use a knife and spoon to remove the fruit from the peel, keeping the peel intact. Trim a small amount of the peel off of the bottom of each “bowl” to create a flat spot that will allow the cup to sit level.
When the frozen yogurt has become firm use an ice cream scoop to fill each lemon cup. Return to freezer until ready to serve. You could garnish with a bit of curled lemon peel or zest.
