Although it isn’t specifically a fall flavor, Chai is one of my favorite flavors this time of year. I’ve been enjoying a new chai latte drink at our local coffee shop. The chai lattes are amazing and they are the inspiration for making these Chai Latte Muffins. These muffins are a lot like a spice cake but with the flavors of Chai tea incorporated. I hope you enjoy this delicious Chai Muffins Recipe!
Easy Chai Muffins Recipe
These chai muffins have all the spices you are familiar with in a chai latte- namely: cinnamon, ginger, cardamom, and all spice with a tiny touch of pepper for spice! This delicious muffin has the chai flavors incorporated into the batter and the streusel topping for a delicious flavor throughout. Serve with a Homemade Vanilla Chai Latte to score a double home run!
Chai Latte Muffins Ingredients:
- 2 cups all-purpose flour
- 1 tbsp. baking powder
- ½ tsp. salt
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp ground cardamom
- 1/2 tsp all-spice
- 1/4 tsp fine ground black pepper
- ½ cup granulated sugar
- 1/2 cup whipping cream
- 1/2 cup Oregon Chai (concentrated tea)
- 1 tsp. vanilla extract
- 1 large egg
- ¼ cup coconut oil (or canola oil)
You will need a muffin tin and some parchment paper or muffin liners for this muffin recipe.
For streusel crumb topping:
- 1/2 cup all-purpose flour
- 1/4 cup light brown sugar, packed
- 1 tablespoons sugar
- 1/2 teaspoon Chai spice blend (combine 2 tsp cinnamon, 1 tsp ginger, 1/2 tsp all-spice, 1 tsp cardamom, and 1/4 tsp pepper)
- ⅛ teaspoon salt
- 3 tablespoons butter, melted
For glaze:
- cream cheese
- powdered sugar
- Oregon Chai (concentrated tea)
How To Make Chai Tea Muffins:
Preheat oven to 365 degrees F.
Combine the flour with the baking powder and spices. Set flour mixture aside.
In a separate bowl blend together the sugar, whipping cream, Chai, vanilla, egg, and canola oil.
Slowly add the dry ingredients to the wet ingredients, mixing to combine. Do not over stir.
Pour the muffin batter into greased muffin tins or tins lined with paper wrappers.
In another bowl combine the crumb ingredients. Sprinkle about 1 tbsp of crumb topping over each muffin.
Bake in the preheated oven for 20-25 minutes or until a pick inserted in the center comes out clean.
Remove from the oven and allow the muffins to cool completely.
While muffins are cooling, mix together the cream cheese with the powdered sugar and tea. The amount of each will depend on thick you want the glaze. Using a mixer will give your glaze a more smooth consistency.
Drizzle the glaze over the cooled muffins and serve! They make a great breakfast, addition to brunch, or treat anytime of day. Theses muffins with the warm spices of chai would also be great served with this delicious coffee frappe recipe.
