Soft Pumpkin Chocolate Chip Cookies Recipe

Makes 2 dozen cookies
Cookie Ingredients:
- 1 Cup butter
- 1 Cup sugar
- one cup canned pumpkin puree
- 1 egg
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 Cups semi-sweet chocolate chips
How To Make Pumpkin Chocolate Chip Cookies:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper (optional).
In a large mixing bowl, blend the first 4 ingredients with a beater till smooth.
In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
Add the flour mix, a little at a time, to your pumpkin mix. Blend the flour mix into the pumpkin mix as you go. Be careful not to overmix.
Once the flour is fully blended into the pumpkin mix, fold the chocolate chips into the batter.
Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
Bake in a preheated oven at 375 degrees for 10-12 minutes. Let the cookies cool on a cookie sheet for 2 minutes before moving them to a wire rack to complete cooling.
