Easy Soft Pumpkin Chocolate Chip Cookies

Fall is here, Ya’ll!  I know I’m not the only one who loves this time of year.  Leaves are subtly beginning to pick up their autumn tones. The angle of the sun adds a brilliance to crisp, blue Fall skies. But most importantly pumpkins are everywhere!  It is a great time of year to enjoy some easy pumpkin chocolate chip cookies. You cannot deny the versatility and health benefits of cooking with pumpkin.  A serving of pumpkin contains 200% of your recommended daily allowance of Vitamin A.  That is really good news for your peepers!  Pumpkin also has loads of Vitamin C to boost your immune system.  It has been shown to lower blood pressure and improve sleep.  All of those benefits make pumpkin an excellent ingredient.  I love to cook pumpkins as dessert.  My family loves this Soft Pumpkin Chocolate Chip Cookies recipe. Soft Pumpkin Chocolate Chip Cookies Recipe

Soft Pumpkin Chocolate Chip Cookies

Prep Time: 15 minutes
Cook Time: 10-12 minutes
Makes 2 dozen cookies

Soft Pumpkin Chocolate Chip Cookies Ingredients:

  • 1 Cup butter
  • 1 Cup sugar
  • one cup canned pumpkin puree
  • 1 egg
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 Cups semi-sweet chocolate chips

How To Make Soft Pumpkin Chocolate Chip Cookies:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper (optional).

In a large mixing bowl, blend the first 4 ingredients with a beater till smooth. 

In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.

Add the flour mix, a little at a time, to your pumpkin mix. Blend the flour mix into the pumpkin mix as you go. Be careful not to overmix.

Once the flour is fully blended into the pumpkin mix, fold the chocolate chips into the batter.

Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie.

Bake in a preheated oven at 375 degrees for 10-12 minutes. Let the cookies cool on a cookie sheet for 2 minutes before moving them to a wire rack to complete cooling.

They will be soft in texture and fluffy, similar to a cake brownie, and totally delicious! Enjoy your delicious soft pumpkin chocolate chip cookies.

  6. Drop cookies onto an ungreased cookie sheet.
  7. Bake at 375 degrees for 10-12 minutes.
  8. Let the cookies cool on a cookie sheet for 2 minutes before moving them to a wire rack to complete cooling.
