In the spring time and summer, I just love salads. They make the perfect lighter, cooler dinner option for the warmer months. This steak salad is a tasty creation that keeps my steak loving husband happy and my salad loving daughter happy. This Mojito Grilled Steak Salad recipe was shared by Food Network’s Jamika Pessoa with Home & Family host Cristina Ferrare (the show airs weekdays at 10 am ET/PT on the Hallmark Channel). I was given permission to share it here.

1) In a small bowl, whisk Mojito and 1 tablespoon of olive oil. Pour over steak and marinate for 20-30 minutes
2) Season both sides of steak with salt and pepper. Place steak on grill and sear until golden brown on the outside and desired doneness inside. (Chef recommends medium rare or medium.) Once cooked, set steak aside to rest.
3) Lightly drizzle corn, onion, bell pepper, and mango with olive oil and season with salt and pepper. Place on grill (aluminum foil optional) for 2-3 minutes until slightly charred. Remove from grill. Cut corn off cob and dice vegetables. Set aside to cool.
4) Whisk dressing ingredients in a bowl or pulse in a blender or food processor until well mixed. Assemble salad in a large bowl or on a large platter or use individual serving bowls. Toss salad greens in dressing. Thinly slice steak on a cutting board and arrange over salad. Serve immediately.
If you are looking for grilled steak salad recipes, this hearty salad will satisfy beef lovers and veggie lovers alike! It is a relatively easy dinner that guests are sure to love. I like to add some feta cheese or goat cheese crumbles (personal preference).
