Pumpkin No Bake Cookies Recipe

A friend of mine recently sent me this neat paleo pumpkin spice no-bake cookie recipe from plaidandpaleo.com to check out. She served them at a party and they were a big, healthy hit!  In the midst of attempting to make these no bake oatmeal pumpkin cookies, I took the liberty to change a few things, as I’m not really a paleo eater and, while I liked the pumpkin, I wanted a more normal no-bake cookie experience. So while these pumpkin no bake cookies are no longer paleo, they are still pretty darn healthy and delicious. Welcome to my easy Healthy Pumpkin Cookies Recipe that requires absolutely no baking!

Pumpkin-Cranberry No-Bake Cookies

In my opinion, these pumpkin no bake cookies are even easier to make than normal no-bake cookies, and the recipe doesn’t use any granulated sugar, but instead sweetens with honey and vanilla.

The same friend who sent me the recipe also is a fabulous dabbler in the kitchen and makes homemade almond butter. She had given me a jar of almond butter for my birthday, and I decided to use it in this pumpkin no back cookies recipe for extra complementary flavor.

Since I’m not a fan of coconut, I switched out the shredded coconut for rolled oats.

Then, in honor of fall, I paired the flavors of pumpkin and cranberry by adding a handful of cranberries to the concoction.

Last but not least, I melted chocolate chips and drizzled them over these Pumpkin-Cranberry No-Bake Cookies to offset the tangy cranberries with a tad of sweet.

Easy Recipe For No Bake Pumpkin Cookies

Pumpkin No Bake Cookies

Makes about 16 cookies

Pumpkin-Cranberry No-Bake Cookie Ingredients:

  • 1/3 cup honey
  • 1/3 cup almond butter (or peanut butter)
  • 1/3 cup coconut oil
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla
  • 2 cups oats
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup cranberries (optional)
  • 1/4 cup melted chocolate chips for topping (optional)

If you don’t have pumpkin pie spice, use a ¼ tsp of cloves, allspice, ginger, and nutmeg and ½ tsp of cinnamon.

These pumpkin no-bake cookies are made with simple, wholesome ingredients that you can feel good about. Natural sweeteners like honey and pumpkin puree bring just the right amount of sweetness without refined sugar, while almond or peanut butter adds a boost of protein and healthy fats. Coconut oil offers a nourishing base, and hearty oats provide fiber to keep you full and satisfied. With warm pumpkin pie spice and optional add-ins like cranberries and a drizzle of melted chocolate, these cookies are as nutritious as they are delicious—proof that healthy treats can be both easy and indulgent.

How To Make Pumpkin No-Bake Cookies:

Add all the ingredients except for oats, chocolate, and cranberries into a large microwave-safe mixing bowl. Warm for twenty or seconds and mix together. Add cranberries and oats, then drop onto parchment-lined cookie sheet, drizzle with chocolate, and set in fridge for 2 hours.

They stay quite moist and therefore are a bit more crumbly than typical no-bakes, but they do hold together. As the oats soak up most of the liquid, they don’t pool into cookie shape, so I molded them with my fingers before drizzling with chocolate and setting in the fridge to cool. Although they’re no longer paleo, these Pumpkin No-Bake Cookies are a very fun, healthy fall twist to a dessert favorite!

Pumpkin No Bake Cookies

Ingredients

  • 1/3 cup honey
  • 1/3 cup almond butter (or peanut butter)
  • 1/3 cup coconut oil
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla
  • 2 cups oats
  • 1/2 cup cranberries
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 cup melted chocolate chips for topping (optional)

Instructions

  1. Add all the ingredients except for oats, chocolate, and cranberries into a large microwave-safe mixing bowl. Warm for twenty or seconds and mix together.
  2. Add cranberries and oats, and mix together.
  3. Then scoop up cookies with a spoon and place onto a parchment lined cookie sheet.
  4. Drizzle with melted chocolate.
  5. Set in fridge for 2 hours to let the flavors fully come together and so that they harden for serving.

    Yum – can’t wait to try this no bake pumpkin cookies recipe! I recently found out that I’m allergic to dairy, wheat, gluten and eggs and my 3 year old son to dairy!
