With summer here one of my go to meals is salads. It doesn’t matter if it’s lunch or dinner time, I love salad. My goal is to get the kids eating more salads for side dishes and for the main dish too. The more colorful we can make them the better success we have! Homemade Strawberry Balsamic Vinaigrette Dressing

Ingredients:

How To Make Strawberry Balsamic Vinaigrette:
Wash the strawberries and remove the stems and hulls. Cut them in half and place them in a food chopper or blender. I usually use my Ninja but you could use any type of blender.
Add the oil, vinegar, lemon juice, and mustard to the strawberries.
Blend all the ingredients until they become smooth. The mixture will be fairly thick and depending on your balsamic it may vary in color from a shade of pink to a bit more brown. This won’t change the taste at all.
Taste after you blend to make sure it isn’t to tart. You may need to add additional honey mustard or additional seasonings depending on how you like your dressing. Pour it over your food and enjoy! If you have extra just store it in the refrigerator in an airtight container in the refrigerator for up to a week.
