Vegetable Quinoa Lasagna Recipe
Vegetable Quinoa Lasagna Ingredients
1 cup of water
2 cups of quinoa
2 cups of mixed vegetables ( cooked, streamed )
1 jar of marinara sauce
1 package of large sliced low skim mozzarella
1 tbsp. grated parmesan
Vegetable Quinoa Lasagna Directions
Preheat oven at 350.
Take your quinoa and cook according to package.
Take a 9×13 lasagna pan or baking dish, spray with olive oil, and layer your cooked quinoa with cooked, sliced, mixed vegetables, marinara, and sliced cheese. Sprinkle with grated parmesan.
Place in your preheated oven for 10 min. Remove your vegetable quinoa lasagna stand and let cool a bit then serve and enjoy!
