Delicious Quinoa Lasagna Recipe

Are you looking for a fast, healthy meal idea?  Then you are in luck!  This Vegetable Quinoa Lasagna recipe is super easy to make and very healthy for the whole family and tastes like a comfort food that everyone will enjoy.  This is a vegetarian recipe and the use of quinoa (pronounced KEEN-wah) is noteworthy because quinoa is a complete protein. Unlike other plant foods, it is a source of all nine essential amino acids, in the right proportions, to support a person’s nutritional needs!This vegetable quinoa lasagna recipe is shared with us today by Francesca Pucher from her cookbook, “Fit Cuisine, Healthy Food Made Simple.”

Vegetable Quinoa Lasagna Recipe

Vegetable Quinoa Lasagna

Quinoa Lasagna Ingredients

  • 1 cup of water
  • 2 cups of quinoa
  • 2 cups of mixed vegetables  ( cooked, streamed )
  • 1 jar of marinara sauce
  • 1 package of large sliced low skim mozzarella
  • 1 tbsp. grated parmesan

How To Make Quinoa Lasagna 

Preheat oven at 350.

Take your quinoa and cook according to package.

Take a 9×13 lasagna pan or baking dish, spray with olive oil, and layer your cooked quinoa with cooked, sliced, mixed vegetables, marinara, and sliced cheese.   Sprinkle with grated parmesan.

Place in your preheated oven for 10 min. Remove your vegetable quinoa lasagna stand and let cool a bit then serve and enjoy!

This vegetable quinoa lasagna is a great meatless meal that the whole family will enjoy. The recipe is easy to make and full of flavor . Vegetable quinoa lasagna goes great with a large salad.  I hope you enjoy!

Vegetable Quinoa Lasagna

Ingredients

  • 1 cup of water
