Tonight I decided to spice up the dinner table with a new dish that my family and I have dubbed “Chorizacos.” My brother-in-law, who is famous for throwing together last-second dishes with whatever is left in the cabinet, is in town for a visit. Naturally, I brought him to the grocery store with me, picked out a few ingredients and said “what can we make with this?” These tacos became a quick favorite for the whole family, and hopefully will become one of yours, too!
Tasty Chorizo Vegan Taco Recipe
- 1 bag of vegan chorizo (there are various brands out there, or you can make your own!)
- hard blue corn tortilla taco shells
- one bunch of kale
- 1-2 cups dry white rice
- vegan pepper jack cheese, shredded (I used Daiya cheese)
- 1 tomato, diced
Extras (add for taste):
- salsa
- garlic powder
- sea salt
- lime juice
- cayenne pepper
- paprika
- cilantro
How To Make Vegan Taco Recipe
1. Cook rice according to directions on package
2. Massage tomato, garlic powder, sea salt, lime juice, cayenne pepper, paprika and cilantro into the bunch of kale
3. Grind the ingredients from step 3 using a food processor or blender
4. Cook chorizo according to directions on package (or according to recipe)
5. Apply kale mix, rice and chorizo to taco shell
6. Top with salsa
7. Serve your chorizo vegan tacos
