So when it comes to TV-watching foods for this fall, finger- foods like chips and dip, pretzels and other small bites are the way to go. Scooping up salsa or dip with a tortilla chip requires much less effort than trying to coordinate a fork, knife and plate—plus you get to eat your “utensil!” This 7 layer dip recipe is the ideal appetizer for a crowded party because it can be made ahead of time in one dish, making it perfect for hassle-free prep and cleanup.

This recipe for Fiesta 7 Layer Dip is a party dip classic for a couple of reasons. First of all, it could not be easier to throw together; you simply layer your ingredients a couple hours before the party and stick the dip in the fridge until your guests arrive!

Secondly, this dip combines everything you love about tacos, burritos and fajitas into one serving dish. From guacamole to refried beans to olives, this dip puts a vegetarian spin on the traditional taco and absolutely has something for everyone.

Finally, this dip is, quite simply, absolutely delicious! It’s one of those addicting appetizers that people immediately flock to at parties and you can be guaranteed that you’ll leave the get-together with an empty serving dish. Fiesta 7 Layer Dip Recipe

Refrigeration Time: 2 hours
Serves: 14 (1/2 cup dip per serving)

Fiesta 7 Layer Dip Ingredients:

  • 1 10 oz can Ro*Tel® Original Diced Tomatoes and Green Chilies, drained, liquid reserved
  • 1 16 oz can Traditional Refried Beans
  • 1 12 oz container refrigerated guacamole or homemade
  • 1 16 oz container sour cream
  • 1/4 cup sliced green onions
  • 1 1.25 oz package taco seasoning mix or homemade
  • 1 cup shredded Cheddar and Monterey Jack cheese blend
  • 1 2.25 oz can sliced ripe olives, drained
  • Tortilla chips, optional

How To Make 7 Layer Dip:

Reserve 1/2 a cup of drained tomatoes and set aside. Blend the remaining tomatoes and reserved liquid with the beans in a medium bowl.

Spread the bean and tomato mixture in an 8×8-inch glass baking dish or round casserole dish. Top with the guacamole.

In a small bowl, blend together the sour cream and the taco seasoning mix. Spread over guacamole.  Top evenly with layers of cheese, olives, green onions and the reserved tomatoes. Chill for 2 hours prior to serving.

Unless you want to be a total animal, like me, and just eat it after you make it!

Serve with tortilla chips.

Ingredients
