Fiesta 7 Layer Dip Ingredients:
- 1 10 oz can Ro*Tel® Original Diced Tomatoes and Green Chilies, drained, liquid reserved
- 1 16 oz can Traditional Refried Beans
- 1 12 oz container refrigerated guacamole or homemade
- 1 16 oz container sour cream
- 1/4 cup sliced green onions
- 1 1.25 oz package taco seasoning mix or homemade
- 1 cup shredded Cheddar and Monterey Jack cheese blend
- 1 2.25 oz can sliced ripe olives, drained
- Tortilla chips, optional
How To Make 7 Layer Dip:
Reserve 1/2 a cup of drained tomatoes and set aside. Blend the remaining tomatoes and reserved liquid with the beans in a medium bowl.
Spread the bean and tomato mixture in an 8×8-inch glass baking dish or round casserole dish. Top with the guacamole.
In a small bowl, blend together the sour cream and the taco seasoning mix. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and the reserved tomatoes. Chill for 2 hours prior to serving.
