This is the ultimate Italian comfort food in a box! I love to serve my family homemade dinners every night of the week. Gathering around the dinner table and enjoying family meals together is a sacred tradition in our house. Sometimes school schedules can make this challenging! It is great to have a few trusted comfort food dinners in the freezer for when this happens.

Authentic Taste

Michael Angelo’s Eggplant Parmigiana is a delicious and convenient take on a classic Italian dish. Made with freshly sliced eggplant, rich marinara sauce, mozzarella, and parmesan cheese, this frozen meal delivers authentic flavors when you don’t have time or ingredients on hand to cook from scratch. The eggplant is tender and holds its texture well. The sauce has a balanced, homemade taste with just the right amount of seasoning. Family Size

Michael Angelo’s Eggplant Parmigiana is available in an individual size portion or a Family Size. I used the Family Size and it says 5 servings per container. That is probably accurate for 2 adults and three younger kids. I have a teenage boy. So the meal works nicely for my 17 year old son and my husband and I. We love the thinly sliced eggplant which is generously coated with egg wash, breadcrumbs, and Italian seasoning for yummy browned medallions topped with three cheeses (Romano, Parmesan, and Mozzarella). I served it with cheesy garlic bread this time but sometimes I serve it with a mixed greens salad. It’s one of the best frozen Italian meals available, making it a great option for a quick, hearty meal that still satisfies like comfort food.

Easy Clean Up

Another one of my favorite things about serving a Michael Angelo’s frozen dinner? I just plate it up and there are no pots and pans to clean! That is right not frying pan with olive oil in it, no egg wash bowl, no breadcrumbs bowl, no sauce pot, no serving dish. I just baked it in the pan that the Eggplant Parmigiana came in. Served it up and tossed the pan away. Wow, saving on the clean up felt great!

When I did a search, I could see that they are available at several stores near me such as Publix, Kroger, Walmart, and Target. It also allows you to click on each location and see the total product assortment supplied to that store. Pretty cool!
