As with most of our gluten free cooking, we’ve searched for a long time and tried many recipes before finally combining many to create one that we love. They are safe for our little guy with Celiac Disease but the whole family loves them and when we have guests for breakfast, no one knows they are gluten-free.

Easy Gluten Free Waffles Recipe with Apple Topping

Waffle Ingredients:
- 1 cup All Purpose Gluten Free Flour – keep in mind that not all gluten free flours are created equal! You’ll want to be sure you’re using a gluten free all purpose flour you know and love. We love the Pamela’s brand Artisan All Purpose or Bob’s Red Mill.
- 2 tsp baking powder – I like to use a corn starch free baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3/4 cup whole milk
- 2 tbsp raw sugar
- 1 1/2 tbsp coconut oil
- 2 large eggs at room temperature
- 3/4 tsp real vanilla extract
- coconut oil for oiling waffle iron
How To Make Gluten Free Waffles:
Mix together dry ingredients in one bowl and set aside.
In a separate large bowl mix together wet ingredients, combining well.
Stir together wet and dry ingredients together just before you are ready to begin cooking waffles as the batter will begin to thicken as it sits.
Grease your waffle maker iron with coconut oil, this is part of what gives the waffles a crisp, golden brown outside.
Pour about 1/2 cup of batter into a 6″-7″ waffle iron. How much batter to use will vary by the size of your waffle maker. Cook for 2 1/2-3 minutes or until golden brown.
While the waffles are cooking, begin preparing your homemade apple pie filling topping.
Topping Ingredients:
- 2 apples – cored and diced
- 3/4 cup raw sugar
- 1/2 cup water
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp lemon juice
- 1 tbsp gluten free all purpose flour
- 1/4 cup water
How To Make Apple Topping For Waffles:
Combine the apples, water, sugar, and spices in a sauce pan on the stove and simmer until the apples begin to soften.
Once the apples start to soften, mix together the all purpose flour and the remaining 1/4 cup of water, stirring well to make sure the flour is dissolved. Stir in the flour mixture to the apples and continue cooking until the liquid thickens.
Simmer until ready to serve.
