Gluten Free Sweet Potato Waffles Recipe

Sweet potato waffles are a delicious and nutritious twist on traditional waffles, offering a natural sweetness and a boost of vitamins, fiber, and antioxidants. They’re versatile, pairing well with both sweet and savory toppings, such as maple syrup, fresh fruit, or even avocado and eggs. Sweet potatoes also add moisture to the batter, creating a tender texture that makes the waffles hearty yet fluffy. Perfect for breakfast or brunch, they’re a great way to use up leftover sweet potatoes while sneaking in an extra serving of vegetables. Plus, they’re easy to make gluten-free and gluten-free, making them a crowd-pleaser for various dietary needs.

Sweet Potato and Rosemary Waffles
Makes 4 Servings (Gluten-Free)

Healthy Sweet Potato Waffles Ingredients:

  • 1 1/2 Cup brown rice flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 eggs, whites and yolks separated
  • 3/4 C unsweetened almond milk
  • 1 Tbsp extra virgin coconut oil
  • 1 tsp alcohol-free vanilla extract
  • 1.25 cups sweet potatoes, peeled, cooked and mashed
  • 1 tsp rosemary, minced
  • 1.5 Tbsp ghee (clarified butter)

If you don’t have any brown rice flour and gluten-free isn’t important to you, it is OK to substitute all purpose flour. However, brown rice flour absorbs more liquid than all-purpose flour. Therefore you may need to go a little light on the almond milk in the recipe to avoid the batter being to wet or runny.

These particular waffle ingredients were chosen for their added health benefits. For example, coconut oil is also a source of medium-chain triglycerides (MCTs), which may provide quick energy and potential health benefits. However, if you don’t have coconut oil or that isn’t important to you, you could substitute butter or olive oil.

Healthy Sweet Potato Waffles Recipe

How To Make Sweet Potato Waffles:

1. Combine the dry ingredients (brown rice flour, baking powder, and salt) in a large mixing bowl. Add unsweetened almond milk, 4 egg yolks, coconut oil, vanilla extract, sweet potatoes, and rosemary to mixture. Mix until combined.

2. In a separate bowl, whip 4 egg whites with a hand mixer until it resembles whipped cream. Fold whipped egg whites into mixture until fully combined with a creamy texture.

3. Grease waffle maker with ghee and place 3 large spoonfuls of waffle batter onto the center of the preheated waffle iron. Close and cook for 4-5 minutes or until fully cooked.

Serve and enjoy! If there are any extra sweet potato waffles, store them in an airtight container and place in freezer. Then just heat them up in a toaster oven before serving for an easy breakfast on busy mornings.

Ingredients

    These sweet potato waffles were amazing. I have been eating a lot of gluten free foods lately and I find that I love them. They don’t taste any less good! I didn’t have brown rice flour so I used oat flour and still came out great.
