If you’re in the mood for buffalo chicken wings but want to avoid the orange fingers and greasy lips, then these little meatballs are perfect for you—no wet wipes required! Fix them for a crowd and you won’t have to worry about wing stains on your furniture. These little meatballs pack a punch, so serve some blue cheese or ranch dressing on the side for dipping.

Ingredients:
- 1 pound ground chicken (may substitute ground turkey)
- 1 rib celery, finely diced
- 2 scallions, finely diced
- 1 egg
- 2 tablespoons (30 ml) + 1 cup (240 ml) buffalo wing sauce, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Pinch of black pepper
- 1/2 cup (120 ml) chicken broth
How To Make Chicken Meatballs
In a large bowl, combine the chicken, celery, scallion, egg, 2 tablespoons (30 ml) of the buffalo wing sauce, garlic powder, salt, and pepper. Stir with a wooden spoon until the mixture is well combined.
Use a medium-size cookie scoop to measure out 20 meatballs and place them in a single layer on a large plate or baking sheet lined with parchment paper. Each meatball should weigh about 1 ounce (28 g).
Put the plate of meatballs in the freezer for 15 minutes to flash freeze them. This will help them retain their shape during cooking.
Add the broth and 1/2 cup (120 ml) of the buffalo wing sauce to the instant pot. Remove the meatballs from the freezer and place them into the pot.
How long to cook chicken meatballs
Close the instant pot lid and seal the vent. Cook on HIGH pressure for 10 minutes. Quick release the steam.
Use a slotted spoon to remove the meatballs from the pot and transfer to a serving plate or bowl. Top them with the remaining 1/2 cup (120 ml) buffalo wing sauce.
If desired, place the meatballs on a baking sheet and put them under the broiler for 3 to 5 minutes for a stickier buffalo coating.
What to serve with chicken meatballs
