I have come up with a pumpkin white chocolate chip cookies recipe that I think you will love. My friend and I were discussing how much we love pumpkin in fall recipes. Then she mentioned her son who is a picky eater and how she adds pumpkin to recipes to get more veggies in his diet. I loved the idea. I had been thinking of a pumpkin bundt cake or a pumpkin cheesecake but when she mentioned that, I decided to make cookies. I knew I had to give it a whirl because my son LOVES cookies and I love the idea of a healthier, yummy snack as well. The sweet white chocolate is really a great flavor when paired with pumpkin so these are a new favorite pumpkin recipe in our house.

Pumpkin Chocolate Chip Cookies Ingredients:
- 1/2 cup unsalted butter, room temperature (1 stick of butter)
- 1/2 cup canned Pumpkin (or homemade pumpkin puree)
- 1/2 cup brown sugar
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg
- 1 2/3 cups of all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp pumpkin pie spice (optional)
- 1/2 of 11 oz. bag of white chocolate chips (5.5 oz)
I dig pumpkin because it adds extra fiber and Vitamin A to recipes. Pumpkin is also packed with Beta Carotene. Not only is adding pumpkin into recipes a great way to get your veggies in, it is also a great way to reduce your fat consumption as you can substitute 1 cup of pumpkin for one cup of oil or butter in most recipes. When used as a replacement for butter, eggs or oil, pumpkin can also reduce calories. Pumpkin is a pretty versatile vegetable as it can be used in a variety of sweet and savory dishes and served up for all three meals, snacks and desserts! Plus, you can use canned pumpkin so it can be a super easy addition to your baking.
How To Make White Chocolate Pumpkin Cookies:
Preheat oven to 350 degrees Fahrenheit.
Place butter, brown sugar, and white sugar into a large mixing bowl and mix well until smooth and creamy. Add pure pumpkin, vanilla, egg and beat until the wet ingredients are well blended. I use a electric mixer on medium speed for this part but that is optional.
Now add the dry ingredients- flour, baking soda, and salt and mix well.
Finally, fold the white chocolate chips into the batter using a rubber spatula.
Evenly place large spoonfuls or cookie dough balls onto a cookie tray allowing enough room for them to melt outwards a bit when they bake.
Place in preheated oven and bake for about 10-12 minutes or until beginning to turn golden brown.
Remove the pumpkin white chocolate chip cookies from oven. Take them off the cookies sheet with a spatula and allow to cool on a wire rack.
Serve and enjoy! If you have any leftover white chocolate chip pumpkin cookies, store them in an airtight container once they are completely cooled.
The pumpkin in a nice mild addition of fall flavor for your cookies. If you or your family love spices you can also add 1/2 tsp pumpkin spice or ground cinnamon. My daughter loves the white chocolate pumpkin spice cookies but my son and I like them plain. I do the first batch without and the second batch with the added spice.
