I have come up with a pumpkin chocolate chip cookies recipe that I think you will love. My friend, whose son is a picky eater, gave me the idea. She said it’d be a great way to veggies down and I loved the idea. I was thinking of a pumpkin coffee cake or a pumpkin cheesecake but when she mentioned that, I knew I had to give it a whirl because my son LOVES cookies and I love the idea of a healthier, yummy snack as well.
I dig pumpkin because it adds extra fiber and Vitamin A to recipes. Pumpkin is also packed with Beta Carotene. Not only is adding pumpkin into recipes a great way to get your veggies in, it is also a great way to reduce your fat consumption as you can substitute 1 cup of pumpkin for one cup of oil or butter in most recipes. When used as a replacement for butter, eggs or oil, pumpkin can also reduce calories. Pumpkin is a pretty versatile vegetable as it can be used in a variety of sweet and savory dishes and served up for all three meals, snacks and desserts!
Delicious Pumpkin Chocolate Chip Cookies Recipe
Pumpkin Chocolate Chip Cookies Ingredients:
- 1/2 cup butter, room temperature
- 3/4 cup canned Pumpkin or baked pumpkin flesh mashed up
- 1/2 cup brown sugar
- 3/4 cup white sugar
- 1 1/2 tsp vanilla
- 1 egg
- 2 cups of all purpose flour
- 1 12 oz. bag of chocolate chips
- 1 tsp baking soda
- 1 tsp salt
Pumpkin Chocolate Chip Cookies Directions:
Preheat oven to 375 degrees.
Place butter and sugar into a large bowl and mix well until smooth and creamy. Add pumpkin, vanilla and beaten egg until blended.
Add flour, baking soda, and salt and mix well.
Finally, fold the chocolate chips into the batter.
Evenly place large spoonfuls onto a cookie tray allowing enough room for them to melt outwards a bit when they bake.
Place in preheated oven and bake for about 10 minutes or until beginning to turn golden brown.
Remove the pumpkin chocolate chip cookies from oven and cool on a wire wrack. Enjoy! I bet your kids don’t even notice the pumpkin in them! I notice it a little and I love the fall flavor.
