This original recipe is brought to you by Earth Balance Buttery Spread. I was given the challenge to a create a vegan meal recipe with an element of mindfulness. I chose to make a quick vegan breakfast that should be easy for any one to replicate and that shows a lot of versatility. These delicious, savory green onion grits can be enjoyed as a quick breakfast, an easy vegan side dish recipe, or even as a quick vegan dinner.
Quick Easy Vegan Breakfast: Green Onion Grits
To me, choosing to eat a vegan meal is a mindful choice because it has a lighter carbon footprint than a meal with meat. I further made this quick easy vegan meal a mindful recipe by choosing non-GMO and organic ingredients.
Savory Green Onion Grits Ingredients:
1/2 cup of quick grits
2 cups of water
3 tbsp. of organic green onions sliced
2 tbsp. of Earth Balance Buttery Spread (Organic Whipped or Original)
1/4 tsp. salt

This quick easy vegan meal is ready in under 10 minutes.
How To Make Vegan Grits:
First, slice the tips of the green onions off the tops and bottoms and discard tips. Then slice 1 1/2 tablespoons from the green side and 1 1/2 tablespoons from the white side of the green onions.
Place 1 tbsp of vegan, non-GMO Earth Balance Buttery Spread into a skillet and put on medium-high heat. When the Earth Balance melts, add the green onion and saute and until it begins to brown.
Add 2 cups of water to the pan with the sauteed green onions and bring to a boil.
Add quick grits, stir and reduce to simmer. Allow to cook for 5 minutes simmering at a low heat.
Dish the green onion grits into into bowls. Top each with 1/2 tbsp of Earth Balance and serve!
This delicious, savory green onion vegan grits recipe can be enjoyed as a quick vegan breakfast. It also makes an easy side dish recipe. You can even shred a little vegan cheese over the top and serve it as a quick vegan dinner.

If you are not using quick grits, follow the grit brand’s instructions for water amount and cook time.
Ingredients
- 1/2 cup of quick grits
- 2 cups of water

Instructions
