Sometimes a box of rich chocolate is just what you want to satisfy a craving, but other times a lightly sweetened treat is so much more satisfying. That is where something like a shortbread cookie just lightly drizzled with chocolate comes in. Buttery and flakey- the texture is amazing and it has just enough sweetness to satisfy your sweet tooth. While you can use any size or shape of cookie cutter I think the little bite sized cookies are fun, plus you can eat a few more and not feel guilty! If you want a little more chocolate flavor you can dip the bottoms of cookies in the melted chocolate before drizzling. I think you will absolutely love this easy shortbread recipe. We use different cookies cutters for different seasons and the recipe is a favorite at our house.
Easy Shortbread Recipe With Chocolate Drizzle- Delicious Butter Shortbread Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup powdered sugar
- 2 ½ cups all purpose flour
- 1 tsp. vanilla
- ½ cup semi–sweet chocolate chips
- 1 tsp. melted coconut oil
- ¼ tsp. salt
Easy Shortbread Recipe Directions:
Preheat oven to 350°
In the bowl of stand or hand mixer cream butter, sugar, and vanilla until smooth.
Mix in flour and salt just until combined.
Refrigerate dough for 30 minutes.
Place dough between 2 sheets of waxed paper and roll to ¼” thickness- this is my favorite tip when making cookies, it makes for much easier cleanup.
Use 1” cookie cutter to cut out shapes.
Transfer cookies to a parchment paper lined baking sheet.
Bake for 10-12 minutes, until edges begin to brown.
Remove from oven and cool completely.
Place chocolate chips and oil in a microwave safe bowl, heat in 30 second increments, stirring each time until melted.
Dip a fork in melted chocolate and shake back in forth above cookies to drizzle with chocolate.
Allow chocolate to set (placing cookies in freezer will speed up set time).
Store in an airtight container for up to 3-5 days.
Try not to devour all of these butter shortbread cookies at once. They are so good that it is hard not to eat 5 or 6 in one sitting!
