Strawberry Greek Yogurt Pie Recipe

I originally designed this simple Greek Yogurt dessert for a kid-friendly recipe contest over at Pop Sugar. I wanted it to be easy, healthy, and yummy for a child’s palate so I came up with this super easy to make Strawberry Greek Yogurt Pie. It is such a healthy dessert option that you may want to eat it for snack and breakfast too! I just love things that are delicious and nutritious.

Simple Ingredients:

  • 1 Container of Ripe Strawberries
  • 3 Cups Plain Greek Yogurt
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup Honey, Maple Syrup, or Agave
  • 1 Graham Cracker Crust

Graham cracker crust makes a delicious Greek yogurt pie crust. The graham crackers crust can be store bought or you can make your own. I made mine with the recipe over at Sally’s Baking Addiction. If you make your own Greek yogurt pie crust, you can do individual serving cups instead of a pie pan as a fun variation on this Greek yogurt dessert. Allow to cool before filling.

Can you use regular yogurt? No, I really wouldn’t. Greek-style yogurt is a lot thicker and you need that thickness for the no bake pie filling. If you were going to use plain yogurt, you’d have to mix it will something to thicken it like whipped cream, cool whip, cream cheese, or gelatin mixture. But then you will lose the healthy, lazy pie attributes!

How To Make The Greek Yogurt Pie Filling:

Whip your chosen sweetener and vanilla into the Greek yogurt and then place back into the refrigerator to keep cool. (My favorite sweetener is maple syrup because it tastes great and it mixes easily.) You can use an electric mixer or do it by hand. Place yogurt mixture in fridge until pie crust is ready.

Fresh fruit is not only a delicious and healthy topping, it is also pretty! Slice your strawberries lengthwise so that you have triangle shape slices. You can use raspberries instead and it tastes just as great but the sliced strawberries are like little hearts and that is hard to beat for looks.

Remove your Greek yogurt pie filling from the refrigerator (aka icebox). Fill your graham cracker crust with it, smoothing the top flat.

Then arrange fresh strawberry slices by placing the pointed part of the triangle strawberry slices in towards the middle of the pie and forming a circle at the center of the pie.

Then continue to layer the strawberry triangles on top of each other till you reach the outer edge of the pie.

Stick the pie back in the refrigerator to set for 10 minutes or leave it in there until ready to serve.

Remove, slice and enjoy!

Ingredients

  • 1 Container of Ripe Strawberries

Instructions

  1. Whip your chosen sweetener and vanilla extract into the Greek yogurt and then place back into the refrigerator to keep cool.
  2. Remove stems and slice your strawberries lengthwise so that you have triangle shape slices.
  3. Fill your graham cracker crust with the filling smoothing the top flat.
  4. Arrange strawberries covering the pie in a pattern.
  5. Stick the pie back in the refrigerator to set for 10 minutes or leave it there until ready to serve.
  6. Slice and enjoy!

    The best part about this yogurt pie is that it is so pretty and easy to make. Now that my homegrown strawberries are coming in I’ll have to try this recipe again and see if it is even better! What a perfect dessert.
