It is that time of the year when we all love to grill! After all, cooking outdoors is not only fun but it also doesn’t heat up your kitchen which is great when the summer heat has kicked in. But let’s face it. The reason we all love to grill the most- is flavor! I just love that smokey kick that grilling imparts. Naturally, I was delighted when King’s Hawaiian Bread challenged me to come up with a delicious summer grilling recipe. This post is sponsored by King’s Hawaiian but all opinions expressed are my own. I gave it some thought and came up with a delicious red pepper grilled chicken sandwich.
Red Pepper Grilled Chicken Breast Sandwich
This summer grilling recipe is scrumptious! It combines sweet and savory flavors to give a full range of complementary flavors in every bite. The King’s Hawaiian Original Hawaiian Sweet Hamburger Buns offer the perfect way to sandwich the peppery chicken, garlicy pesto, the creamy fresh mozzarella, and the sweet grilled red peppers. The buns hold their shape and offer a sweet profile addition that makes this sandwich perfect for the whole family. The recipe is pretty easy to assemble and really just takes about as long as it takes you to grill the chicken.
serves 4
Ingredients:
4 small chicken breast or 4 chicken breast cutlets
2 tsp of lemon pepper
1 tbsp of olive oil
1 red pepper
1/4 cup of pesto (store bought or use my homemade pesto recipe)
1 fresh mozzarella ball
1 package of King’s Hawaiian Original Hawaiian Sweet Hamburger Buns
How to Make A Grilled Chicken Sandwich:
Marinate the chicken in a little olive oil and lemon pepper for about 30 minutes before you begin grilling.
Depending on your type of grill, you may need get your coals ready before you begin grilling.
While your chicken is marinating and your grill is heating up (if necessary to your grill type), you can quickly make pesto.
Rub red pepper with oil olive oil and place on grill. Rotate the red pepper as the pepper skin blisters and grill marks appear. When the red pepper has grill marks all the way around, you can drop it in a pyrex bowl with a lid or a ziploc bag to let it sweat for about 5-10 minutes. This will making peeling the skin off of the pepper much easier.
Meanwhile, go ahead and lay the chicken on the grill to cook. Flip when grill marks have developed. When the internal temperature of the chicken has reached 165 degrees and it has nice grill marks on both sides, remove that to bowl and cover with foil to let the juices redistribute.
Peel the red pepper but use caution as it will probably still be hot and the juices inside the pepper may hot enough to burn if you don’t use care. After you peel the pepper, cut it open and remove the seeds and stem. Rinse quickly with cool water if you need help removing any loose seeds. Cut grilled red pepper into four parts.
Place your King’s Hawaiian Original Hawaiian Sweet Hamburger Buns on the grill for a quick toasting.
Slice your grilled chicken into large strips for the sandwich.
Then assemble the sandwiches by spreading some pesto on each side of the bun, adding a layer of grilled chicken, a layer of grilled red pepper, and a layer of sliced fresh mozzarella. Voila! Let your taste buds enjoy a delicious Red Pepper Grilled Chicken Sandwich!
