Lemon Pignoli Stars Recipe

Lemon pignoli, a Sicilian treat, is a tasty yet not-so-sweet cookie  with cornmeal as the surprise ingredient.

Lemon Pignoli Stars Ingredients:

•2 cups yellow cornmeal

•1 cup flour

•½ teaspoon salt

•1 cup butter or margarine

•2/4 cup sugar

•1 teaspoon vanilla

•1 cup finely chopped pignolli

•1 tablespoon lemon zest

Lemon Pignoli Stars Directions:

1. In a medium-size bowl, place cornmeal, flour and salt; stir to combine. In a large bowl, beat butter, sugar, eggs and vanilla until it becomes fluffy. Stir in cornmeal mixture and blend. Add chopped pignoli and lemon zest. Divide cookie dough into four equal portions; shape each into a flattened ball; warp in waxed paper. Chill for several hours
until firm enough to roll out.

2. Preheat oven to 350.

3. Lightly grease large baking sheets.

4. Roll out dough, one quarter at a time, ¼ inch thick, on a lightly floured surface. Cut into stars with a 3-inch cookie cutter. Place 1 inch apart on prepared baking sheets; decorate points with whole pignoli. Press in slightly. Reroll and cut out all trimmings. If dough becomes too soft to handle, return to refrigerator.

5. Bake 8-10 minutes or until lightly browned at edges. Cookie will remain yellow. Cool on baking sheet 2-3 mi9nutes then removed to wire racks; cool completely. Makes 4 dozen- cookies.

Dutch Apple Pie Recipe:

Christmas Dessert recipes

Line a 9-inch pie plate with pastry. Put 3 pounds prepared, sliced tart apples into pie shell.

Dutch Apple Pie Ingredients:

3 lbs. sliced tart apples (granny smith work well)

1 cup heavy cream

¼ teaspoon nutmeg

½ teaspoon cinnamon

1 pie shell (uncooked)

Combine the following ingredients:
1 cup heavy cream, ¼ teaspoon nutmeg, ½ teaspoon cinnamon

Beat until smooth and thick: gradually blend into mixture of 1/3 cup sifted flour, ¾ cup sugar, and a pinch of salt.

Pour over apples. Bake at 450 F for 20 minutes or until crust begins to brown. Then cover pie with foil. Reduce heat to 350 F and bake for 45 minutes more or until filling thickens. Serve warm with thin slices of cheddar chess. Serves 6-8 people.
