Saint Patrick’s Day is almost here (March 17th) and it’s time to go green! Green isn’t usually the color you’re hoping your food takes on but don’t fret. I’m going to show you 17 different ways to eat green without icky food coloring stains. Don’t be scared of the green. Embrace the green foods! Bring on the green recipes for St. Patrick’s Day! It’s what St. Patrick would have wanted, right?

I was more than excited when I came across this recipe at Greatist. It’s an interesting spin on the classic “green eggs and ham” you’ve definitely heard of. In addition to being a fantastically green breakfast wrap, this dish includes some of my favorite healthy choices like whole wheat tortilla and pesto.

Pesto is the ultimate pasta sauce! That’s why I had to include this delightfully green dish. In addition to it’s brilliant color, this pesto recipe is super simple and easy to follow. Just combine garlic cloves, basil and pine nuts for the desired effect.

Green Pea Pasta

Yes, more pasta! Why? Because pasta is tasty, fast, and easy. Also, the result of this recipe from In Fine Balance is just too beautiful to pass up. Spinach, peas, and pesto give this pasta its color and those white chunks are yummy feta cheese. It’s almost too pretty to eat!

Italian Spinach Pie

Take a page from Popeye’s cookbook with this recipe from San Pellegrino. It includes 10 ounces of spinach! Combine that with leeks, white rice, and even Olive Oil makes an appearance. Tell the kids we’re having pie for dinner tonight!

Green Rice with Pistachios

Rice is as simple as it gets for a dinner dish. Serious Eats brings us this recipe from the cookbook Lucid Food, which specializes in eco-friendly cooking. The rice is specially made with copious amounts of cilantro, parsley, and dill. This vegetarian dish can easily be spruced up for meat eaters with your choice of grilled chicken, beef, or lamb.

Spinach & Goat Cheese Bisque

Use dark green spinach to create this shockingly green dinner. Perfect for the holiday, but tasty enough for any day! Anna Thomas from Eating Well writes, “A little fresh goat cheese and a touch of butter are just enough to make this spinach soup silky, creamy and a little nutty—but not enough to overdo it.”

Creamy Lime Squares 

I’m willing to accept a little green food coloring with a recipe this gorgeous.  It just reminds me of how festive one can really get for St. Paddy’s day. As long as you’re not sick of green thus far, I would definitely recommend trying out this fun dessert recipe from Eat, Live, Run for your last course.
