Streusel Ingredients:
- 2 tablespoons organic butter
- 2 tablespoons organic flour
- 5 tablespoons organic brown sugar

- 2 tablespoon organic walnuts, ground into small pieces (use a food processor or coffee grinder)
Apple Coffee Cake Ingredients:
- 1 cup organic coconut oil or butter
- 1 cup organic granulated sugar
- 3 teaspoons organic vanilla extract
- 2 organic eggs
- 1 cup of organic apple sauce
- 2 cups organic all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons of organic cinnamon
- 1/2 teaspoon ground ginger (optional)
- 1/2 teaspoon ground nutmeg (optional)
- 1/4 teaspoon cloves (optional)
- 1/3 cup of white chocolate chips (optional)
- 1 cup cored, peeled, diced apples (I suggest granny smith apples or honeycrisp apples but any apple slices will do!)
How To Make Apple Cinnamon Coffee Cake
Preheat oven to 350°F degrees.
In a small bowl, combine all streusel ingredients and mix well. Set aside.
In a large bowl, add coconut oil (or butter), and sugar and mix until smooth. Then add vanilla and apple sauce, then mix well. Next, whisk two eggs and add to the other wet ingredients in the large bowl, mixing all ingredients until combined.
In a medium-sized bowl, combine the dry ingredients- flour, baking powder, baking soda, salt, cinnamon and desired spices. You can either stir them or run the mixture through a sifter. Once mixed, combine and beat well. Set aside.
Next, grease a Bundt cake pan.
Sprinkle the streusel mixture across the bottom of the Bundt pan, spreading it out enough to fill the bottom of the small ring. Pour the cake batter into your baking pan on top of the mixture. Then, sprinkle on the white chocolate chips and the diced apples onto the coffee cake batter, pressing down with a spatula so they don’t poke out.
Bake in oven for 40-45 minutes. After 40 minutes, check to see if the top of the cake is browning. You can also insert a toothpick into the cake to see if the toothpick comes out clean (free of coffee cake mixture) indicating the cake is done cooking. Set aside and let cool.
Once cooled, flip the Bundt pan over onto a plate so that the streusel topping is now facing upward, making the top of the cake. Slice into pieces and enjoy! By the way, this is delicious served with a caramel creme brulee latte.
