Greek Meatball Appetizer With Yogurt Dipping Sauce
Meatball Appetizer Ingredients:
3/4 pound 96% lean ground sirloin
1/4 pound lean ground lamb
1 egg white
2 tablespoons seasoned bread crumbs
1/2 cup fresh mint leaves, chopped
1/4 cup finely chopped onion
1 clove garlic, minced
Yogurt Sauce Ingredients (Tzatziki Sauce):
1 cup non-fat Greek yogurt
1/2 clove garlic, pressed
2 tablespoons minced fresh mint
1 tablespoon minced fresh dill
1/2 cucumber, skinned, seeded and grated (about 1/2 cup)
1 tablespoon lemon juice
1/4 teaspoon salt
dash of black pepper
How To Make Beef and Lamb Meatballs With Yogurt Dipping Sauce
Preheat oven to 375°F.
Mix beef, lamb, egg white, bread crumbs, mint, onion and garlic in large bowl.
Roll out bite-sized meatballs (about 3/4-inch rounds) and place on broiling rack or cooling rack placed over baking tray. You may want to line the baking pan with aluminum foil for easy clean up.
Bake 15 minutes.
While meatballs bake, combine yogurt, garlic, mint, dill, cucumber, lemon juice, salt and pepper. Mix well. Garnish with extra fresh mint.
Serve meatballs warm with cool yogurt sauce for dipping.
To make ahead, cook completely, cool and refrigerate. To serve, warm in 250°F oven until just warmed and serve with chilled yogurt dipping sauce.
