Pumpkin Cake Bars with Cream Cheese Frosting

I’m continuing to bake and create fall recipes.  It seems like there is always something in the oven these days.  Pumpkin cake bars with cream cheese frosting are such a favorite of ours and they are so easy to make.  They come together rather quickly and make a great dessert for any fall gathering.  They don’t have to be for dessert though.  We actually have a batch in the oven for brunch as I write this.  After all, pumpkin is full of nutrients!  These cream cheese pumpkin bars are so good you are going to want them ALL the time!

Pumpkin Bars with Cream Cheese Frosting

Recipe For Pumpkin Cake Bars with Cream Cheese Frosting

Ingredients:

For the bars:

  • 15 oz can pure pumpkin
  • 1 2/3 cup raw sugar
  • 4 large eggs at room temperature
  • 1 cup of canola oil
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • one tsp salt

For the frosting:

  • 6 oz cream cheese at room temperature
  • 1/4 cup butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1-2 tbsp milk or whipping cream

How To Make Cream Cheese Pumpkin Bars:

Preheat the oven to 350 degrees.

Whisk the eggs and add the raw sugar, pumpkin, and oil together in the bowl of a stand mixer.  Mix on high until blended well.

Combine the flour, pumpkin pie spice, baking powder, baking soda, and salt in a separate bowl.

Slowly add the dry ingredients into the pumpkin mixture, mixing until combined.

Pour the mixture into an ungreased 10″ x 15″ jelly roll pan.

Bake in the preheated oven for 25-30 minutes.

Remove from the oven and allow pumpkin cake bars to cool completely before cutting or removing them from the pan.

While the pumpkin cake bars are cooling, make the cream cheese frosting.

Mix together the cream cheese, butter, vanilla, and milk using a stand mixer.

Slowly sift the powdered sugar into the cream cheese mixture.  Blend until smooth and creamy.

Spread the cream cheese frosting over the cooled pumpkin cake bars.

Cut the cream cheese pumpkin bars and serve.

These are great for dessert, breakfast or a snack.  They aren’t overly sweet so they are a really versatile fall treat!
