Cheesy Potatoes And Ham Recipe Made With Simply Potatoes

This cheesy potatoes and ham recipe makes a nice hearty breakfast or brunch and it is super easy to make. Part of the reason it is so easy to make is because it calls for Simply Potatoes, the sponsor of this post. They also add just the right amount of onions and so you don’t have to worry about peeling and dicing those either- no tears- yay! Simply Potatoes Diced Potatoes Recipe For Cheesy Potatoes And Ham

Cheesy Ham Potatoes

Cheesy Ham Potatoes Ingredients:

  • 1 bag of Simply Potatoes Diced Potatoes With Onion
  • 1-2 tbsp of olive oil
  • 1 tbsp of fresh herbs like parsley, thyme, and/or rosemary
  • 3/4 cup of diced ham (can use deli slices or leftover baked ham)
  • 1 cup of cheddar, shredded
  • 1/2 cup of Monterey pepper jack cheese, shredded
  • 4-8 eggs (optional)

How To Make Cheesy Potatoes With Ham:

In a large skillet over medium high heat, add oil (1 tbsp for nonstick pans, 2 tbsp for a cast iron or stainless steal pan) and allow to warm up a bit. Then add one bag of Simply Potatoes Diced Potatoes With Onion and stir. Cover and allow to cook for about 5 minutes. Then stir again and allow to cook for another 5 minutes.  Add your ham and fresh herbs and stir.

Cover and allow to cook for another 7 minutes.  Stir and even out the potatoes and ham into a flat surface.  Then add the cheese over the top of the potato mixture and cover and let cook for another 3 minutes over medium heat while the cheese melts.

I like to serve my Simply Potatoes Diced Potatoes Cheesy Ham Potatoes with a fried egg over the top.  If you want to do that too, just fry some up while the cheese is melting in the pan.
