This fish taco recipe is a great way to add something fresh to your dinner meal plan. I thought these fish tacos and pepper avocado salsa were just delicious! It takes a little time to chop up all the veggies for the salsa but other than that these dish is nice and easy and quick!
To start, go ahead and prepare your fresh salsa since it takes the longest. It can sit and let the flavors come together while you cook the fish taco recipe. It is basically a variation on pico de gallo, a type of salsa fresco.
Bell Pepper Avocado Salsa Ingredients:
- 1/4 cup finely chopped Onion
- 1/4 cup finely chopped Orange Bell Pepper
- 1/4 cup finely chopped Yellow Bell Pepper
- 1 finely chopped Tomato
- 1 finely chopped Avocado (on the less ripe side are easier to chop)
- 1/4 cup finely chopped Cilantro
- Juice of 1 Lime
You may want to increase the onion to 1/2 cup if you are preparing these fish tacos just for adults. My kiddos are sensitive to onion but I can sneak in a little finely chopped! After chopping all the ingredients, just mix together and add lime juice and a dash of salt. (Save the pit so you can grow avocado from seed). Put aside to let the flavors come together.
I use this Pepper Avocado Salsa on the fish tacos and I use the leftovers to dip my corn tortilla chips in, which I serve on the side of the tacos.
Fish Taco Ingredients:
- Cod Filets (or other fish of your choice such as talapia) I chose Cod because it is mild but makes nice big, beautiful flakes.
- Juice of One Lime
- 1-2 tbsps Olive Oil
- Flour Tortillas
- Cooked Corn Kernels
- Chopped Fresh Lettuce
I marinated my filets in the lime juice and olive oil (after flipping to coat). Then I just sauteed them for about 3 minutes on each side till the fish was opaque and could be easily flaked. At the same time I cooked up some frozen corn kernels and chopped some fresh lettuce.
Then I warmed my flour tortillas in a skillet with a little butter to brown them lightly. It takes time to do this for each tortilla but makes them so much more yummy! Then just assemble with a bit of fish, corn, and salsa in each tortilla. Delicious! Serve with corn tortillas, left over salsa, and margaritas!
