I know I always wonder where the kids learned their skills and how they come up with their brilliant recipes. Well, Adam developed this NY strip recipe on his own through trial and error. MasterChef Junior airs Thursdays at 8/7c on FOX if you want to tune in and root for him. Master Chef Steak Recipes: Delicious New York Strip With Red Wine Reduction Steak Sauce
You may want to start the red wine reduction first and then cook the NY strip steak while it is reducing. A red wine reduction sauce for steak is one of the very best sauces for beef available. It has incredible flavor and compliments the red meat perfectly. This is a delicious steak dinner with a rich sauce. It would be great served with sauteed potatoes.
Ingredients for Red Wine Reduction Sauce for Steak:
Dash of olive oil
1 onion
slice of bacon
1 cup of red wine (Cabernet sauvignon or Pinot noir)
1 cup of chicken stock (preferably homemade chicken stock or beef broth will work fine too)
How To Make Steak Reduction Sauce:
Slice onion
Slice bacon
Add dash of oil to the pan over medium-high heat
Add bacon
Cook onions in bacon fat until translucent
Add the red wine and allow it to reduce about 7-8 minutes over low heat
Add the stock and again reduce until the liquid coats the back of a spoon
Strain the sauce
Set red wine reduction for steak aside momentarily
New York Strip Steak Recipe Ingredients:
2 New York strip steaks
Salt to taste
Pepper to taste
½ stick of butter
2 fresh thyme stems
3 garlic cloves
How To Cook NY Strip Steak:
Season the steaks with salt and pepper
Place in a heated cast iron skillet (If you want pan-seared steaks, it is essential to have a hot pan before you add the cut of beef to the pan.)
Sear on both sides
Then add butter, garlic, and thyme
Cook 6-8 minutes (for medium rare), frequently spooning butter over top of steak and flipping halfway through
You may use a meat thermometer in the center of the steaks to help determine when it is done if you like. According to Southern Living, “The FDA recommends cooking steak to the temperature of 145 degrees F, which will result in a medium-well steak.”
Drizzle the red wine reduction sauce over the pan seared New York strip steaks and serve with risotto or potato gratin and vegetable of choice. Garnish with fresh rosemary.
