Blueberry Hand Pies- Homemade Goodness!

Blueberry Hand Pie Recipe

Pie is my favorite dessert, and hand pies have become a huge family favorite for kids and for adults. They take just a little more work than a pie, but there are four advantages to individual handheld pies. They freeze well, afford portion control, and make great gifts. Plus, you can pass these around for Valentine’s Day instead of cards!

I will share with you my best flaky crust, but you might want to jump over here to watch my pie crust video on how to make the piecrust.  In a pinch, you can use store bought pie crust, but making your own is cost savings and it will taste better. This pie crust recipe uses a food processor. If you don’t have that, you can do it by hand using a pastry cutter. It will work just fine for these mini blueberry hand pies, but is just a little tricker.

I can tell you by experience, that you might want to make a triple batch of these blue berry hand pies. The first time I made these for twin boys, they were gone in 30 minutes.

How To Make Blueberry Handpies:

This recipe will make about 12 little pies with fruit filling depending on the size of your cookie cutter.

Blueberry Pie Filling Ingredients:

  • 3 cups fresh blueberries (or you can use frozen blueberries, no problem)
  • 3 tablespoons lemonade (can use 2 tbsp water and 1 tbsp lemon juice)
  • three tablespoons sugar
  • 1/2 cup of your favorite berry jam or peach preserves
  • milk for brushing on top of pies
  • Sprinkles or raw sugar
  • 1 tsp lemon zest (optional)
  • Cookie Heart cutout (or round cookie cutter will work fine too)

Blueberry Filling Instructions:

In a large bowl, combine blueberries with lemonade, sugar, and jam. The jam will give body to the berries.

Hand Pie Crust Ingredients:

  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 12 tablespoons cold butter, cut into small cubes and frozen for 15 minutes
  • 1/4 cup ice cold water (may not use all)
  • Plastic bag (ziplock type) or plastic wrap
  • Prepared baking sheet

Homemade Pie Crust Instructions:
Combine flour, salt and sugar in the bowl of a food processor.
Add butter and count for 10 seconds. If there are still big chunks of butter, pulse until they are size of peas.
Slowly add cold water. Do not over mix. Use the finger test. Take the dough between your index and thumb. If it sticks together, it’s read to be placed in plastic bag. Pour into bag or wrap in plastic.
Refrigerate for 30 minutes. Place your refrigerated pie crust onto a clean work surface and use a rolling pin to roll out a nice flat, even layer of the perfect pie crust.

Recipe For Blueberry Hand Pies

Blueberry Hand Pie Assembly

Cut two hearts per cookie from your rolled out pie crust. Lay a single layer of the bottom crust on a baking sheet covered with parchment paper. Fill with one to two teaspoons of the blueberry mixture depending on how big heart is. Brush milk on inside rim, add second heart on top and use fork to close the edges of the pie.

Use the tines of a fork to pierce the top layer to allow steam to vent. Brush top of each pie with milk. Then add sprinkles or raw sugar to the top of each hand pie. Some people would use an egg wash for a toasty brown top but if you are using sprinkles or sugar that is not necessary.

Bake at 400 degrees until your flaky pie crust is golden brown. Bake time is 15 to 20 minutes. Your blueberry hand pies recipe is now ready to cool for 5-10 minutes and then serve. You can serve these homemade hand pies alone or with a scoop of vanilla ice cream or a dollop of whipped cream.

Ingredients

  10. Pierce top (with sharp knife or fork) to allow steam to vent. Brush with milk. Add sprinkles or raw sugar to hand pie tops.
  11. Bake at 400 until golden brown 15 to 20 minutes.
  12. Cool for a few minutes, serve, and enjoy!
